Friday, November 4: RUFFONI FALL PROMOTION STARTS

Planning the menu for the big day requires its own juggling act, but we'll get there. Finally, our favorite moment. Once the number of guests and any dietary restrictions have been confirmed, we can dive into the actual planning. Looking for ideas? Saturday, November 19: GROCERY SHOPPING DAY, YAY
Even if we are pros at grocery shopping, Thanksgiving dinner can be a challenge – there's just so much to remember! We have put together a Thanksgiving cheat sheet based on a Chef's Thanksgiving recipes. Hope it can be useful for double checking!

FOR THE TURKEY
  • one big turkey
  • bay leaves, thyme springs, peppercorns, garlic cloves, brown sugar and salt (for the brine)
  • unsalted butter, sage leaves, garlic powder, salt, black pepper (for the sage butter)
  • unsalted butter, white wine, garlic powder, bay leaf (for the basting liquid)
  • orange, head of garlic, parsley (for stuffing)

FOR THE CRANBERRY SAUCE

  • unsalted butter
  • whole cranberries (frozen or fresh)
  • Bourbon
  • orange juice
  • orange peel
  • sugar, salt, and black pepper

FOR THE GRAVY

  • unsalted butter
  • all purpose flour
  • beef broth
  • salt, black pepper, and sage leaf

FOR THE BRUSSELS SPROUTS

  • brussels sprouts
  • bacon
  • balsamic vinegar
  • Parmesan cheese
  • lemon zest
  • salt, black pepper, and parsley

FOR THE CARROTS

  • sweet carrots
  • carrot juice

  • Yukon Gold potatoes

Monday, November 21: THAW THE TURKEY
This date is very important because it is an easy-to-forget step. If we want to use a frozen turkey, let's thaw it the right way.

To safely thaw our turkey in the refrigerator, simply place the frozen turkey breast side up in an unopened wrapper on a tray in the fridge (40˚F or below) and allow at least one day of thawing for every 4 lbs of turkey.

Need a quicker method? There is always cold water thawing
with which we can expect about 30 minutes per pound of turkey:

  • Place the turkey breast side down, in an unopened wrapper, with enough cold water to cover it completely.
  • Change the water every 30 minutes (if the turkey cannot be completely covered, rotate it every 30 minutes to keep it entirely chilled!

Wednesday, November 23: BRINE THE TURKEY
There is no good turkey without the right brine so here's a step by step recipe for a restaurant-worthy turkey brine:

  • In a large Stockpot, prepare a brining liquid with salt, brown sugar, bay leaf, thyme, peppercorns, garlic cloves and water, and bring to the boil.
  • Turn off the heat source, add more water as needed and allow the boiled brine to cool down completely to room temperature.
  • When the brine is cool, place the turkey into a large brining bag or tub and submerge it, making sure the breasts are fully covered. If needed, place the turkey breasts side down.
  • Move the turkey to the fridge and let it soak for at least 8 hours.

Friday, November 25: BLACK FRIDAY
It's a Bank Holiday: let's go apple picking, finally take that road trip we've been planning or cozy up in front of a movie with our loved ones. Collect memories, not stuff!

Monday, November 28: CYBER MONDAY
This is the last day to rush the stores or search the web for the best deals ahead of the holidays. But you can relax because you have already bought your Ruffoni at the best price when all the stock was available. Great move!
