Getting The Most Out of your Ruffoni Sauté
A sauté pan is a must in traditional European cooking. It has tall, vertical sides so that splatters are minimized, and a generous cooking surface making it perfect for browning and searing. Most sauté pans include a lid, which allows for slow simmering and stewing of tough meats and delicate sauces, and if large, it often has a helper handle so it's even easier to bring to the table for flawless presentation.
A sauté pan is of course great for sautéing freshly picked vegetables or proteins, so go ahead and try it with fresh asparagus tips, green peas, leeks and zucchini with butter, then deglaze with white wine and let reduce into a rich pan sauce. This shape is also perfect for browning and simmering, so sear chunks of meat and soffritto vegetables on medium heat, then add red wine, cover with the lid, and leave to gently bubble away on a low flame. Last but not least, a sauté pan is perfect for frying, as the vertical sides minimize splatters and large surface area avoids the building up of steam: prepare a traditional fried chicken, or make the most of your sauté pan's great temperature control by frying the perfectly flaky yet juicy fish with chips. You can use your sauté pan for almost any recipe, confidently: from crispy skinned chicken, to beef bolognese, from fried fish and chips to seared scallops and sautéed spring vegetables...without forgetting about fruit crisps and cobblers!

COOKING
Recommended for use on all stovetops, including induction. Use a burner that is similar in diameter to the cookware, never heat the pot empty and do not exceed 230 C (450 F). To avoid scratching or dulling the polished surface, do not use knives, sharp kitchen tools, corrosive detergents and metal scouring pads.
WASHING
Dishwasher use is possible but not recommended to preserve brilliance and prevent rim corrosion from harsh detergents.
SILVER CARE
The silver-plated finial will naturally tarnish over time: use a silver-polishing cloth to restore its shine, or to polish more thoroughly remove from the lid by twisting the special screw - rotate the screw, not the finial, to prevent damage to the lid. Always hand-wash as dishwasher use would accelerate the silver tarnishing.
